Despite attempts to unravel the correlation between colloidal virus properties and their interactions outside and inside their host, an in-depth understanding is still missing. This knowledge gap is, to a great extent, caused by challenges associated with the capacity to probe these properties experimentally; thus, great efforts are being invested in developing new approaches or transforming existing ones to characterize the physical-chemical, i.e., colloidal, properties of viruses. Understanding the correlation between these properties and virus interactions is not only important from a scientific point of view but will also hopefully inspire the design of novel viral vectors and virus-like particles for biomedical applications. In this review, we cover the recent experimental advances in characterizing the colloidal properties of viruses with particular attention to virus hydrophobicity, genetic load, nanomechanical properties, and surface interaction forces with host cells. - Study of amyloid fibrils via atomic force microscopyItem type: Journal Article

They also present a fascinating object of study, because of a rich interplay between capillarity, hydrodynamics, interfacial transport phenomena and interfacial rheology, as well as the effects of interaction forces when films thin down to molecular thicknesses. Recent advances in experimental techniques have given further insights in the variety of physical phenomena, which can occur. These techniques are briefly reviewed. How these techniques can be utilised is illustrated by recent studies addressing the effect of interfacial rheological stresses on drainage, the interplay between capillarity and hydrodynamics during film retraction, and the solutocapillary stabilisation of films. Finally, we briefly discuss the challenges of conducting drainage measurements at high and varied capillary numbers and how these could be overcome by the combined use of experiments and simulations. - Addressing multifactorial complexity in freeze structuring of food colloidsItem type: Review Article

(2025)Freeze structuring is a simple and scalable process that allows precise control over pore morphology by manipulating ice crystal formation in aqueous suspensions. By adjusting material and process parameters, freeze structuring of colloidal suspensions can yield various structural outcomes. Food systems are inherently complex mixtures of polysaccharides, proteins, and fats, and unlike well-studied single-component systems, the interactions within these multi-component mixtures during freeze structuring remain largely unexplored. This knowledge gap hinders the immediate application of freeze structuring in the food industry, limiting its broader adoption for structuring complex food systems. This review identifies the suspension characteristics that dictate structural outcomes in food systems, aiming to advance freeze structuring as a viable tool for sustainable food manufacturing. - Rheology of food materialsItem type: Journal Article
